You should not have to ask: the run is drawn to your wall, so the cabinet widths come out of the measurement rather than being chosen from a list. What is worth deciding is the split between drawers and cupboards, because that is the difference you live with. Is it worth ordering spare parts with the kitchen?

A spare hinge or two and a length of matching edging, yes, and they cost very little alongside the kitchen. Years later a door that takes a knock is a five minute fix if the part is in a drawer and a much longer one if it has to be matched to a finish that may have moved on. Ask for it to be added as a line on the quote rather than assuming it is included.

Can I change the drawing after I approve it?

Before it is cut, yes, and changes at that stage cost nothing but time. Once the panels are cut they are cut to your sizes and cannot be re-used on another job, which is why the approval step exists and why we would rather you took an extra week over it. Read the elevations as carefully as the plan: most late changes are about where a door swings or which side of the sink the dishwasher sits, and both are obvious on the elevation.
