Is it worth ordering spare parts with the kitchen?
A spare hinge or two and a length of matching edging, yes, and they cost very little alongside the kitchen. Years later a door that takes a knock is a five minute fix if the part is in a drawer and a much longer one if it has to be matched to a finish that may have moved on. Ask for it to be added as a line on the quote rather than assuming it is included.
What actually ships with the order?
A numbered plan and elevations, a service drawing marking every waste, water point and outlet for your Mogo plumber and electrician, the hardware bagged per cabinet, kickboards and end panels cut to length, and fillers where the room needs them. Nothing on that list is an extra. The service drawing in particular is what stops a cabinet being cut on site to clear a pipe nobody planned for.
